Stuffed Capsicums

INGREDIENTS 

300g Turkey mince 

1 Tablespoon olive oil

1 Brown onion 

1 Teaspoon minced garlic

150g  Sliced mushrooms 

50g Cheddar cheese or cheese of choice 

2 Large Capsicums , cut in half and deseeded 

1 Tsp cumin

1 Tsp chilli flakes (optional)

Salt and pepper to taste 

INSTRUCTIONS 

Heat the olive oil in a large saucepan and fry the onion and garlic for a few minutes until the onion becomes translucent.

Add the turkey mince , cumin, chilli flakes , salt and pepper . Cook for 5-6 mins until mince is browned.

Remove the mince from the heat and stuff the capsicums with the mince mixture.

Top with cheese 

Place the capsicum on a baking tray and cook in a preheated oven on 200 degrees for 20 mins , until the cheese has browned and the capsicum is cooked.
