Roasted Chicken Marylands and Cauliflower


1 tablespoon olive oil

800g Chicken Marylands

8 washed potatoes, halved

600g cauliflower , cut into florets 

2 red onions , cut into wedges 

1/2 cup chicken stock

1 tablespoon dijon mustard 

1 teaspoon minced garlic

Steam green beans to serve 



Preheat oven to 200 degrees fan force. Heat oil in a pan and brown chicken turning occasionally , for 1-2 minutes each side. Transfer to a bowl

Add the potatoes to the pan and cook until golden and turn occasionally. Transfer to bowl. Add the cauliflower and onion and cook for 1 minute or until golden. 

Place browned chicken, potatoes, cauliflower and onion to a baking tray . Combine with stock , mustard and minced garlic. Add salt and pepper to taste. Roast in oven for 25-30 minutes or until chicken is cooked through.

Remove from oven and serve with steamed green beans.
