INGREDIENTS
500g skinless chicken breast
3 cloves garlic
2 red chillies
Pinch of salt and pepper to taste
1 tablespoon olive oil
1 teaspoon soy sauce
1 tablespoon fish sauce
1/2 tablespoon red-chilli paste
2 cups fresh basil
METHOD
Chop the chicken into 2cm cubed pieces, finely chop the garlic and chillies. Use the side of a knife to press the garlic and chilli together to form a rough paste.
Preheat a fry pan or wok over medium-high heat. Add the oil and garlic-chilli paste and fry for 2-3 minutes.
Add the chicken pieces to the pan, cooking them until they are lightly browned, about 3-4 minutes.
Add the soy sauce, fish sauce, red-chilli paste, salt and pepper, and cook until the chicken is cooked through, another 3-4 minute.
Add the basil and cook until its just wilted.
Serve and enjoy
