Baked Balsamic Vegetable Dish

INGREDIENTS 

1 Red capsicum 

1 Eggplant 

1 Zucchini

1/4 Jap pumpkin

1/2 Onion

1 Carrot 

2 Beetroots

1 Teaspoon italian herbs 

Salt and pepper to taste 

1 Tablespoon maple syrup

1 Tablespoon balsamic vinegar

1 Tablespoon coconut oil

 

METHOD

Preheat oven to 200 degrees fan forced and line a tray with baking paper.

Cut vegetables and toss in herbs,  seasoning and 1 tablespoon coconut oil.

Bake for 35 mins or until vegetables are cooked through.

Drizzle baked vegetables in 1 tablespoon balsamic vinegar and maple syrup.

Bake for 5 more mins.

Serve with your favorite protein.
